Pinto Bean Cake with Browned Butter Glaze Recipe

OK Bakers hold onto your socks! This recipe might sound strange but it turns out moist and Yummy! As a matter of fact if you did not tell anyone there were pinto beans in here they would never know!!! Give this one a try and let me know how you liked it!

Pinto bean cake with Browned Butter Glaze

Pinto Bean Cake

1 Cup Sugar
1 Stick of Butter ( Not Margarine )
2 tsp Vanilla
2 Eggs
2 Cups ( Unseasoned ) Mashed Pinto Bean‘s
1 Cup All Purpose Flour
1 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon
1 tsp Allspice OR 1/2 tsp Cloves
1/2 Cup Chopped Pecans
1 Cup Raisins
2 Cups Chopped Apples

Directions :

Preheat Oven to 325 Degrees.
In a Large Bowl Cream Butter & Sugar together until mixed Well, Add in Vanilla & Eggs & Beat Well. Add in Well Mashed Bean‘s. Stir in Dry ingredients ( I Sift Mine in then Stir to Combine) Stir in Nuts, Raisins & Chopped Apples. Put in a Greased & Floured Bundt Pan, Bake for 1 Hour – 1 Hour 20 Minutes Until Toothpick Inserted Comes Out Clean.

Time to Make the Browned Butter Glaze

Browned Butter Glaze

1/2 Cup Butter ( Not Margarine)
4 Cups Powdered Sugar
1 1/2 tsp Real Vanilla
3 Tbsp Milk

DIRECTIONS :

Melt Butter in A Saucepan over Medium High Heat & Cook until it Turns A Light Brown. In A Bowl Add, Melted Butter, Powdered Sugar, Vanilla & Milk & Whisk Until Smooth. Drizzle Or Spread Over Cake. ENJOY!

( Note : Can Make Half a Recipe For Drizzling Over Bundt Cakes)

7-Up Biscuit Recipe

7-Up Biscuits! If you have never tried these you are missing out on one of the BEST biscuit recipes out there. SUPER easy to make and they always turn out PERFECT!!

7 Up Biscuits

7 Up Biscuits

Ingredients

    • 2 cups baking mix ( Jiffy or Bisquick)
    • 1/2 cup sour cream
    • 1/2 cup 7-Up soda ( any clear carbonated drink will work)
    • 1/4 cup melted butter

Directions

  1. Preheat oven to 450 degrees.
  2. Cut the sour cream into your biscuit mix. “Cutting in” is simply incorporating your sour cream, butter or shortening into your dry baking mix without using a mixer. You can use a fork, knife, pastry cutter or the tools God gave you, your fingers. You just want to make sure that each portion of your {wet} ingredient gets coated with the dry mix.
  3. Stir in 1/2 cup 7 Up. The dough will be very soft, don’t worry.
  4. Sprinkle additional baking mix on to your counter, about a 1/2 cup seems to work just fine.
  5. Knead and fold dough until coated with your baking mix. Pat dough out, (no rolling pin needed) and cut biscuits using a round biscuit/cookie cutter. Don’t have one, no problem, you can certainly use a glass or empty soup can to cut out your biscuits. Where there’s a will, there’s a way! Improvising is fine.
  6. Melt butter in a 9 inch square pan. I stick my pan and butter in the oven for a few minutes. Just a few though, the butter will burn, so watch it.
  7. Place cut biscuits on top of melted butter and bake for 12-15 minutes or until brown.

YUM!!!!  Low Carb Crab Stuffed Bacon Cups  Perfect for the Low Carbers!!!

Makes 12 standard or 24 minis Really good option for a meal, or as an appetizer!!

Low Carb Crab Stuffed Bacon Cups

Low Carb Crab Stuffed Bacon Cups

 

▶ INGREDIENTS:
1 lb Bacon
1 lb lump Crabmeat
1 block (8 oz) Cream cheese, softened
1 1/4 C Sharp Cheddar Cheese, grated
2 tsp Old bay
1 1/2 tsp mustard powder
1 stalk celery, very finely chopped



▶ DIRECTIONS:
Pre-heat oven to 425 degrees
Cut bacon in 1/3s for regular cupcake tins, or into 1/4 for minis
Lay bacon in tins, criss crossing, to cover the cup.
*note, I like to precook my bacon a wee bit to make it a little crisper, just cook until it is starting to turn, but is still soft enough to line the cups with.
In a small bowl add your crab, cream cheese, 1 C shredded cheddar cheese, old bay, mustard and celery.
