 POTATO CANDY!

This recipe is has been around for many generations. This was a very traditional treat of the Irish and that is how I became familiar with it through my Irish Great Grandmother who handed down her recipe to her children. This is a VERY sweet treat so be careful not to eat too much 🙂

(makes 24 slices)

What You’ll Need:

1/2 cup leftover (preferably homemade) mashed potatoes
5 cups powdered sugar
1 teaspoon vanilla
1/4 teaspoon salt
4 Tablespoons Peanut Butter (approximately)

What to Do:

Put mashed potatoes, vanilla, and salt into a bowl and add one cup of powdered sugar at a time, while kneading with your hands until mixture becomes a firm fudge-like consistency. You may need a tad more or less of the powdered sugar depending on how the mashed potatoes where made. Make adjustments depending on the texture of the mix, you’ll want it to be firm & dry enough to keep its shape but not too dry that would cause it to crumble.

Divide the mixture in half, sprinkle work surface & rolling pin with powdered sugar and roll the potato candy into a 1/4 inch thickness. Spread a thin, but not too thin, layer of peanut butter on top, about 1/4 inch. If you use too much it will squish out the sides when rolling it up.

Gently roll into a loaf and cover with plastic wrap or wax paper and chill for at least 1-2 hours hours before cutting into 1/2 inch thick slices (approximately 12 per loaf).

I Started making these Ritz Peanut Butter and Marshmallow Cookies several years back. I only make them for Christmas because they are like some serious crack, VERY ADDICTING!  Once you bring these to a party you will be asked for the recipe right away, feel free to tell your friends how to find my blog, http://www.natembry.com 🙂

INGREDIENTS
24 cookies

1⁄2 cup marshmallow cream
1⁄2 cup peanut butter
48 Ritz crackers
1 1⁄4 cups semi-sweet chocolate chips, melted ( you could also try white chocolate chips as well) 

 

DIRECTIONS
Spread about 1 teaspoon peanut butter on 24 of the Ritz crackers.
Spread 1 teaspoon Marshmallow Creme on remaining crackers.
Sandwich crackers together, using one peanut butter and one marshmallow, then dip in melted chocolate or white chocolate (almond bark)
Set crackers on waxed paper and let stand until chocolate sets. Store in air-tight container for up to one week.

Although this  Baked Chicken Parmesan has several steps, it is still a lot easier then traditional Baked Chicken Parmesan. What I love most about this recipe is it is Gluten Free, so I get to enjoy it with my family.

Ingredients
6 boneless skinless chicken breasts
1 (16 ounce) bottles light Italian dressing
1/2 cup light ranch salad dressing
2 tablespoons olive oil
5 tablespoons minced garlic, divided ( I used the pre-minced stuff from the jar)
2 1/4 cups shredded Parmesan cheese, divided ( not the stuff in the green jar)
1 tablespoon dried parsley
olive oil flavored cooking spray
1/3 cup finely chopped white onion ( mild in flavor)
1 (8 ounce) cans tomato sauce
1 (6 ounce) cans tomato paste
3 tablespoons dried basil, divided
3 tablespoons dried oregano, divided
1/2 teaspoon salt
1/2 teaspoon black pepper
1 bay leaf
1 1/2 cups 2% mozzarella cheese, grated

Directions
The morning or the night before serving, combine Italian dressing, ranch dressing, 3 tablespoons minced garlic and 2 tablespoons olive oil in a large zip lock bag. Squish bag around to combine all ingredients. Add chicken breasts to bag, close and squish until they are well coated in the dressing mixture. Put the bag in bowl (to prevent spills) and refrigerate all day or overnight up 24 hours.

When ready to cook, Preheat oven to 400*F. Then mix 2 cups Parmesan cheese, with parsley, 1 1/2 tablespoons of the basil and oregano (each).

Spray a large baking dish (big enough for all six breasts) with olive oil cooking spray.
Remove chicken from baggie one by one and “dredge” in the cheese and spice mixture, until thoroughly coated in cheese mixture. Then place chicken in a single layer in the dish.
When all chicken is coated, place chicken in oven and bake for 20-25 minutes (or until the internal temp is 155*F).

While chicken bakes, in a large non stick sauce pan, make the sauce.
Spray sauce pan with olive oil cooking spray (or use 1 tablespoon olive oil but do not use another flavor spray). Then saute onions and remaining garlic until tender and onions are translucent.

Add tomato paste and tomato sauce to garlic and onions. Stir until smooth. Then add the remaining, oregano and basil and the other spices including the bay leaf. ( if sauce looks to thick for your liking add 1 tomato sauce can of water) Allow to simmer for the remainder of the baking time until you need it.

When chicken has baked 20 minutes, remove from oven and top each breast with sauce, Cover the whole thing, then top with 1/4 cup of mozzarella cheese, put baking dish back into the oven for 10 more minutes or until cheese is bubbly. Then switch your broiler on to brown cheese (optional).
Remove from oven and sprinkle with remaining Parmesan cheese.
Serve it up.
I usually serve my Baked Chicken Parmesan with some Gluten Free Penne Noodles (Barilla Makes the best) I just add a little butter, garlic and add some grated Parmesan. But you can certainly pick the side dish your family will love most.

This recipe is so easy to make! Do you have to take a dish to your upcoming holiday party and you do not have a lot of time to make something? Make this! Everyone LOVES this Crunchy Onion Potato Bake!

Ingredients

2 1/2 cups milk
1 1/2 cups water
1/4 cup butter
1 box (7.2 oz) Betty Crocker® homestyle creamy butter or roasted garlic mashed potatoes
1 can (15.25 oz) Green Giant® whole kernel corn, drained
1 cup shredded Cheddar cheese (4 oz)
1 can (2.8 oz) French-fried onions

Directions
1 Heat oven to 350°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. In 3-quart saucepan, heat milk, water and margarine to boiling. Stir in contents of both pouches of potatoes (from potatoes box) just until moistened; let stand 1 minute. Stir with fork until smooth. Stir in corn.
2 Spoon half of potato mixture into dish. Sprinkle with 1/2 each of the cheese and onions. Top with remaining potatoes; sprinkle with remaining cheese and onions.
3 Bake 10 to 15 minutes or until cheese is melted and onions are golden.

If you have friends or family members that have to follow a gluten free eating plan (Like I do!) they will really THANK YOU for this Gluten Free Snickerdoodle Che Mix treat!

Ingredients

1/4 cup sugar
1 teaspoon ground cinnamon
2 cups Cinnamon Chex® cereal
2 cups Chocolate Chex® cereal
4 cups popped popcorn
1/4 cup butter or margarine

Directions
1 In small bowl, mix sugar and cinnamon; set aside. In large microwavable bowl, mix cereals and popcorn.
2 In 1-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Pour over cereal mixture, stirring until evenly coated.
3 Microwave uncovered on High 2 minutes, stirring after 1 minute. Sprinkle half of the sugar mixture evenly over cereal mixture; stir. Sprinkle with remaining sugar mixture; stir. Microwave 1 minute longer. Spread on waxed paper or paper towels to cool. Store in airtight container.

I make big batches of this Homemade Kahula every Christmas and give them away as gifts in my gift baskets to friends and Family. I usually save bottles during the year to put it in but you can buy new bottles too 🙂

 

6 cups granulated sugar
4 cups water
1/4 cup instant coffee granules
1 cup water
1 (750 ml) bottle vodka (stronger the better)
1/2 cup pure vanilla extract (not imitation, please!)
Directions:

1 Dissolve sugar in 4 cups water in a pan over medium heat; boil for 10 minutes; set aside.
2 Dissolve coffee granules in 1 cup water in a pan over medium heat; boil for 8 minutes.
3 Combine sugar mixture and coffee mixture; cool to room temperature.
4 Stir vodka and vanilla into cooled coffee mixture.
5 Store in sealed, decorative bottles.

SUGAR FREE OPTION
2 cups vodka ( 80 proof)
2 cups water
2 tablespoons vanilla extract
2 tablespoons instant coffee powder
sugar substitute (10 packets)
Directions:

1 Combine first 4 ingredients in saucepan.
2 Cook until all dissolved.
3 Let boil a couple of minutes, leave a cover on pan/remove from heat and let sit at room temperature.
4 Add sweetener.
5 I store in refer.

OK guys if you have never tried this recipe, you must live under a rock hehehe, no just kidding. But no, if you have not tried these Bacon Wrapped Cream Cheese Stuffed Chicken Breast’s you need to! Easier to make then you think and OMG will these impress your family!!!! Also this is a GREAT recipe for Low Carb eaters!!!!

Ingredients
2 Boneless skinless chicken breast
4 tablespoons cream cheese
1/4 cup Pepperjack cheese, shredded
2 tablespoons green onion, chopped
4 to 8 pieces of bacon
Cut chicken into 4 equal size pieces. Pound breast so it is about 1/4″ thick.

Directions
Mix together softened cream cheese, chopped green onions and shredded pepperjack cheese. Put 1/4 of this mixture into the middle of each piece of chicken.

Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.

Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed.

One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding.

Place on baking sheet and back for 30 minutes at 375 degrees F.

Broil topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side.

OOOOOooooo Look what I found over at Kareneskew‘s Blog! Yummy BBQ Bacon Wrapped Meatballs! Just in time for all the holiday parties I will be attending this season.

INGREDIENTS:

1 lb. ground hamburger (95% lean)
1 to 2 cups of BBQ Sauce (I use Head Country)
1/2 to 3/4 pkg. of Stove Top Sage Dressing (dry – do not prepare)
1 pkg. Farmland Maple Glazed Bacon (MUST use maple flavored!)
Salt and Pepper
Pam cooking spray

DIRECTIONS:
Heat oven to 350 degrees. Coat bottom of 13 x 9″ glass pan with Pam cooking spray. In a large mixing bowl, add raw ground beef, BBQ Sauce (as much as you like to really coat it) and the Stove Top stuffing (I usually smash it up a bit before I open the bag). Mix well (I use my hands and really “knead” it around). Make 1 1/2″ balls of mixture and then wrap a whole raw piece of bacon around both ways and set in pan (no need to use toothpicks if you place the bacon with the end down underneath the meatball). Give a squirt on the top of each meatball of additional BBQ sauce. Then cook at 350 degrees for approximately one hour. Use tongs and move meatballs to a serving dish (to remove grease from bottom of dish.)

Who would not want some BBQ Bacon Wrapped Meatballs? I certainly can not think of one person who would not just fall in love with these tiny bites of Yumminess!

I found this YUMMY recipe for Cheesy Potato Corn Cakes over on the Pillsbury website. They looked so good I just had to make them. My Family gave them a BIG thumbs UP! So, of course I had to share them with you all 🙂  Enjoy!

Ingredients

2 cups Hungry Jack® Mashed Potato Flakes
1 can (11 oz) Green Giant™ SteamCrisp® Mexicorn® whole kernel corn, red and green peppers, drained
3/4 cup shredded Cheddar cheese
2 tablespoons all purpose or unbleached flour
2 tablespoons cornmeal
1 1/2 teaspoons seasoned salt
1 teaspoon dried basil leaves
1/2 teaspoon garlic powder
1/4 teaspoon pepper
2 cups milk
1 egg, beaten
1/4 cup butter or margarine
Grated Parmesan cheese, if desired
Directions

In large bowl, combine potato flakes, corn, Cheddar cheese, flour, cornmeal, seasoned salt, basil, garlic powder and pepper; mix well. Add milk and egg; mix well. Let stand 2 to 3 minutes or until liquid is absorbed.
Melt 1 to 2 tablespoons of the butter in 12-inch nonstick skillet over medium heat. Drop potato mixture by 1/4 cupfuls into skillet. Carefully press each to form 3-inch round. Cook 6 to 8 minutes or until golden brown, turning once. Sprinkle with Parmesan cheese. Repeat with remaining butter and potato mixture as necessary.
