OK guys if you have never tried this recipe, you must live under a rock hehehe, no just kidding. But no, if you have not tried these Bacon Wrapped Cream Cheese Stuffed Chicken Breast’s you need to! Easier to make then you think and OMG will these impress your family!!!! Also this is a GREAT recipe for Low Carb eaters!!!!

Ingredients
2 Boneless skinless chicken breast
4 tablespoons cream cheese
1/4 cup Pepperjack cheese, shredded
2 tablespoons green onion, chopped
4 to 8 pieces of bacon
Cut chicken into 4 equal size pieces. Pound breast so it is about 1/4″ thick.

Directions
Mix together softened cream cheese, chopped green onions and shredded pepperjack cheese. Put 1/4 of this mixture into the middle of each piece of chicken.

Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.

Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed.

One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding.

Place on baking sheet and back for 30 minutes at 375 degrees F.

Broil topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side.

OOOOOooooo Look what I found over at Kareneskew‘s Blog! Yummy BBQ Bacon Wrapped Meatballs! Just in time for all the holiday parties I will be attending this season.

INGREDIENTS:

1 lb. ground hamburger (95% lean)
1 to 2 cups of BBQ Sauce (I use Head Country)
1/2 to 3/4 pkg. of Stove Top Sage Dressing (dry – do not prepare)
1 pkg. Farmland Maple Glazed Bacon (MUST use maple flavored!)
Salt and Pepper
Pam cooking spray

DIRECTIONS:
Heat oven to 350 degrees. Coat bottom of 13 x 9″ glass pan with Pam cooking spray. In a large mixing bowl, add raw ground beef, BBQ Sauce (as much as you like to really coat it) and the Stove Top stuffing (I usually smash it up a bit before I open the bag). Mix well (I use my hands and really “knead” it around). Make 1 1/2″ balls of mixture and then wrap a whole raw piece of bacon around both ways and set in pan (no need to use toothpicks if you place the bacon with the end down underneath the meatball). Give a squirt on the top of each meatball of additional BBQ sauce. Then cook at 350 degrees for approximately one hour. Use tongs and move meatballs to a serving dish (to remove grease from bottom of dish.)

Who would not want some BBQ Bacon Wrapped Meatballs? I certainly can not think of one person who would not just fall in love with these tiny bites of Yumminess!

Broccoli Cauliflower Salad

3 bunches of fresh Broccoli (enough to make a head)
1 head of cauliflower
Bacon bites
sunflower seeds
16 oz hidden valley lite ranch
red onion
Tomato
Colby Jack cheese cubed

Cut the broccoli and cauliflower into pieces, once you have completed with that, make sure you wash them well. Cut up part of a red onion, and cut the colby jack cheese into cubes. After you have washed your vegetables and cut the onion and cheese, place in large bowl all together, add the remainder ingredients (the entire 10 oz bottle of ranch, sunflower seeds, and bacon bites. Sunflower seeds, bacon bites, onion and cheese you, can use any desired amount). After all the ingredients have been added, mix all them together with a large spoon. Place in refrigerator and let chill for an hour then serve.

Even though I have a love affair with potatoes I do try very hard to limit how much of them I eat, I find following a low carb lifestyle tends to help keep my curves where I want them 🙂 So THANKFULLY Cauliflower makes a decent substitute to my dear friend the potato! LOADED CAULIFLOWER

Low carb!!!!

Ingredients:
1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
6 Tbs chopped Chives
1/2 cup Mayonnaise
1/2 cup Sour Cream
2 cups Colby Jack Cheese ( may use cheddar)
8 oz container sliced mushrooms (optional)

Directions:
Preheat oven to 425°
In a large pot boil water and cook Cauliflower for 8 – 10 minutes, drain and let cool.
In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3 tbs chives, 1 cups of cheese,mushrooms(optional) and cauliflower and mix well… place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles. Bake for 15-20 minutes until cheese is melted. top with remaining 3 T chives and serve.

Club Pasta Salad

Ingredients:
2 cups uncooked shell pasta
1 (1 ounce) packet hidden valley ranch dressing mix
1/4 cup bacon bits
1/2 teaspoon onion powder
1/2 cup mayonnaise
1 1/2 cups cut-up cooked turkey or 1 1/2 cups chicken
1/2 cup cherry tomatoes, cut into fourths
1/2 cup julienne strips cheddar cheese
4 cups bite-size pieces lettuce

Directions:
Fill large saucepan 2/3 full of water. Heat to boiling. Stir in contents of Pasta.
Gently boil uncovered 15 minutes, stirring occasionally, until tender.
Drain pasta. Rinse with cold water. Shake to drain well.
Combine Hidden valley ranch mix, onion powder and bacon bits with mayonnaise in large bowl. Stir in chilled pasta and remaining ingredients except lettuce. Serve on lettuce. Refrigerate leftovers (if desired, moisten with a few teaspoons milk before servings).

MEATLOAF MEATBALLS TO DIE FOR

Makes 24 meatloaf balls…

Ingredients:
2 lbs. lean ground beef
5 slices sourdough bread
1 c. almond milk (any milk)
1/2 tsp. soy sauce
1 Tbsp. Italian seasoning
1 medium onion, diced fine
2 eggs
4 tsp. minced garlic
12 slices thin bacon, cut in half
Sauce:
1/3 c. brown sugar
1 tsp. prepared mustard (sandwich mustard)
1 c. ketchup
black pepper

Directions:
Preheat oven to 350°. Line cupcake pan with liners or coat with cooking spray. Remove any rings and wash hands well.
Stack bread slices and using a sharp knife, dice bread up as if making croutons. Add milk, eggs, seasoning, soy sauce, onion and garlic to bread and mix well.
Add ground beef to wet mixture. Using hands, mix well until wet mixture is combined well.
Using an ice cream scoop, scoop up a ball of meat mixture. Take one of the bacon halves and wrap around the ball. Place ball into cupcake pan.
Mix all ingredients for sauce in a small bowl. Take a spoon of this sauce and spread over the tops of each meatloaf ball. Sprinkle with black pepper.
Bake 45 minutes to an hour, depending on oven. After 45 minutes, keep an eye on them to not get over done or they will not be as moist.
