SOFT SNICKERDOODLE COOKIE RECIPE

These Soft Snickerdoodle cookies are my husbands favorite cookies. Although the process seems a little daunting, you have to chill the dough, you HAVE to chill the cookie sheets also, BUT they are worth the effort. They come out soft and perfect every time! So sometimes it pays not to be a lazy cook, which honestly I am most of the time! ENJOY!

1/4 tsp fine sea salt
1/4 tsp ground cinnamon
1/4 tsp baking soda
1/4 c butter, melted

Directions~
Pre~heat the oven to 350Β°

Crush your slivered almonds

In a mixing bowl whisk together the almond flour, almonds, baking soda, salt and cinnamon. Add the butter and combine with a spoon

Line a muffin tin with liners. Push the almond mixture into the bottom of the liners.
Bake for 10 minutes to set

Turn oven down to 300Β°

In a mixing bowl, add cream cheese, vanilla, sugar and eggs
Beat until light and fluffy.
Spoon mixture into the muffin tins with prepared almond crust
Bake for 40 minutes

While cakes are cooking, start on the caramel
Combine granulated sugar and 2 tablespoons water in a medium, heavy saucepan over medium-high heat; cook until sugar dissolves, stirring gently for 3 minutes.
Stop stirring and continue cooking 10 minutes or until the color of light brown sugar. Remove from heat; carefully stir in butter and milk. Place pan over medium-high heat until caramelized sugar melts. Bring to a boil; cook 1 minute.
Remove pan from heat~ cool caramel to room temperature. Cover and chill 1 hour or until slightly thickened.
Take cheesecakes out of the oven when they are done. Once cool, the middle will slightly fall and this is the perfect indent for the caramel.

Easy 5-Minute Almost Cheesecake Dessert

Ingredients
1/4-1/3 cup butter
1 1/2 cups graham cracker crumbs
1 (14 ounce) cans sweetened condensed milk
8 ounces sour cream
1/4 cup lemon juice
1 (21 ounce) cans cherry pie filling ( or blueberry pie filling)

Directions
Preheat oven to 350 degrees F (oven rack set to lowest bottom position).
Grease an 8 x 8-inch square baking dish.
In the baking dish melt the butter inside the oven.
Remove from oven; sprinkle the cracker crumbs in the melted butter, stir well; press on the bottom of the baking dish to form a crust.
Bake the graham crust in a 350 degree oven for 7 minutes; remove and set aside.
In a medium bowl, mix together the sweetened condensed milk, sour cream and lemon juice.
Spread evenly over the crumb/crust.
Spoon the pie filling evenly over the cream layer (don’t worry if it sinks a bit, it will all bake together).
Bake on lowest oven rack for 25-30 minutes, or until set (don’t over bake).
Serve warm or chill overnight (this will firm up and develop in flavor if left in the refrigerator overnight).
** This dessert is very good so you might want to consider doubling it — this can be easily doubled and baked in a 13 x 9-inch baking pan, double the canned pie filling too and bake it for just a couple minutes longer.
